Mini BBQ Chicken Naan Pizzas

A nod to CPK's scrumptious BBQ Chicken pizza, these individual naan pizzas are full of the same tasty goodness! Make for one or a crowd.

Equipment

  • Toaster Oven (See notes for conventional oven directions.)
  • Cheese Grater
  • Cutting Board
  • Butcher Knife

Ingredients
  

  • 2 Mini Naan
  • 1/4-1/2 cup Shredded Rotisserie Chicken (Bite-sized Pieces)
  • Chopped Cilantro
  • 1/4 cup Chopped Onion (Sweet or Red)
  • 1/2 cup Freshly Grated Colby Jack Cheese
  • BBQ Sauce (Drizzled to Taste)

Instructions
 

  • Chop onion, cilantro and shredded rotisserie chicken if necessary.
  • Place two mini naans on a piece of aluminum foil (on baking tray for conventional oven).
  • Layer chicken, onion and cilantro onto mini naans. Drizzle with BBQ sauce from side to side to taste (see picture).
  • Grate Colby Jack cheese and top mini naan pizzas with 1/4 cup each.
  • Carefully set foil on rack or tray in toaster oven at 350 degrees for 10 minutes. When baked at 350, the crust may not be crispy enough for you. If you opt to increase the temperature of the toaster oven, make sure to keep at eye on them after the 5 minute mark.

Notes

Conventional Oven Directions:
Start by preheating the oven to 400 degrees. Prepare mini pizzas on baking tray with aluminum foil or parchment paper as directed. You can make several by doubling or tripling recipe if cooking for more than on person. 
Bake 10 minutes at 400 degrees, or longer, if you prefer your "crust" to be crispier.
(When I left mine in for 12 minutes, it was a bit too crispy for me.)
