When I went to college in Boston, I was introduced to California Pizza Kitchen, and I fell in love with their BBQ chicken pizza. The version you can find in the frozen aisle at the grocery store is decent, sure, but nowhere near as good as the original.
Fast forward to today, where exactly one other family member likes BBQ sauce, and that one family member refuses to try my favorite pizza. Sigh.
I’m super reluctant to buy a whole frozen pizza just for me, plus the price for a frozen pizza these days is freaking ridiculous AND the quality has gone downhill. So I went BBQ chicken pizzaless for years. Cue: tears.
But last year, the cravings, the hit HARD. So I started brainstorming easy (you know it has to be easy over here!) ways to recreate it at home, on an individual scale.
Enter: Costco’s shredded rotisserie chicken and mini naan.

Mini BBQ Chicken Naan Pizzas (Toaster Oven OR Conventional Oven)

I can’t remember exactly what came first, the craving, or the need for more easy recipes to use up all the shredded rotisserie chicken from Costco, but either way, they’re a match made in heaven.
We were already buying mini naan from Costco semi-regularly to dip in yummy soups. It occurred to me that mini naans were the perfect base for individual pizzas!
I had some shredded rotisserie chicken in the fridge, plus BBQ sauce, leftover cilantro and Colby Jack cheese. We only had sweet onion, which turns out I prefer to the red onion on the original.
Combine that with our amazing toaster oven and BAM, the mini BBQ chicken naan pizza was born.
P.S. My husband had to strong arm me into buying THIS toaster oven/air fryer combo, but now I don’t know how I ever lived without it. We use it every single day, multiple times a day. And the life-time warranty is unprecedented! They’ve replaced it a couple of times now.

Mini Naan
You can get these at the grocery store for a ridiculous amount of money, OR you can get them from Costco in packs of 18 for so much less.
If you’re worried about waste, we toss the Costco-sized pack in the freezer after a few days and defrost them a few at a time as needed.
Chopped Cilantro
Grown your own or buy from the grocery store. We occasionally use it in fajitas, as well.
Chopped Onions (Sweet or Red)
We always have sweet onions in the house, so that’s what I use. But the original CPK BBQ chicken pizza uses red onion.
BBQ Sauce

Choose your favorite BBQ sauce. I typically use Sweet Baby Ray’s original. But hey, I’m no BBQ sauce snob: use whichever flavor you have in your fridge.
Freshly Shredded Colby Jack Cheese
This part is SUPER important – grab a block of Colby Jack cheese and shred it fresh.
In a pinch, you can use pre-shredded Mexican or Colby Jack cheese, but it won’t be as good. Trust me.
Shredded Rotisserie Chicken
The star of the show: Costco’s $5 chicken shredded and saved for all the things (but in our house, mainly THIS soup), including these tasty mini pizzas.

Mini BBQ Chicken Naan Pizza Recipe

For the sake of family dinner (because not every family is full of picky eaters), I also included directions to make a larger batch in a regular oven.

Mini BBQ Chicken Naan Pizzas
Equipment
- Toaster Oven (See notes for conventional oven directions.)
- Cheese Grater
- Cutting Board
- Butcher Knife
Ingredients
- 2 Mini Naan
- 1/4-1/2 cup Shredded Rotisserie Chicken (Bite-sized Pieces)
- Chopped Cilantro
- 1/4 cup Chopped Onion (Sweet or Red)
- 1/2 cup Freshly Grated Colby Jack Cheese
- BBQ Sauce (Drizzled to Taste)
Instructions
- Chop onion, cilantro and shredded rotisserie chicken if necessary.
- Place two mini naans on a piece of aluminum foil (on baking tray for conventional oven).
- Layer chicken, onion and cilantro onto mini naans. Drizzle with BBQ sauce from side to side to taste (see picture).
- Grate Colby Jack cheese and top mini naan pizzas with 1/4 cup each.
- Carefully set foil on rack or tray in toaster oven at 350 degrees for 10 minutes. When baked at 350, the crust may not be crispy enough for you. If you opt to increase the temperature of the toaster oven, make sure to keep at eye on them after the 5 minute mark.
