I’ve been tweaking this creamy chicken tortilla soup recipe for the past few months and finally got it just right, according to the Doran family, anyway.
Anytime there’s a meal more than a couple family members adore, I latch onto it – fiercely.
And five out of seven people gobble this up, so it’s become a staple meal in our house. May it forever be, amen.
By this time, you all know how much we love Costco, so, bonus points: it’s made with Costco’s shredded rotisserie chicken.
Served with scoop Tortilla chips, which we get in giant bags from (you guessed it): Costco.
Because the cost of chips these days, my God, it will be the death of us all. If you’re not buying them in bulk or on BOGO sale, how is your grocery budget even surviving?!

20-Minute Shredded Chicken Tortilla Soup (3 Easy Steps)

I always like to give credit where credit is due, so to start, this recipe was inspired by Cookie Rookie’s Creamy Tortilla Soup recipe.
But my family apparently hates soup with tons of broth (what is wrong with them?), so I started my changes by upping the shredded chicken and cutting the liquid.
They also aren’t big tomato fans, so buh-bye half the diced tomatoes. And I really like simple recipes, so shredded rotisserie chicken (shredded in advance) was a must.
You get the idea – I tweaked it, like a lot.
So if you like a chunky tortilla soup with not a lot of broth but super flavorful and FAST, this is the tortilla soup for you!
P.S. This is a great easy meal to make for someone who just had a baby!

Diced Onions
I prefer sweet onions. It’s all I buy, but you can use a whole yellow onion, instead if you like.
If you really want to go crazy, use red onion.
Shredded Rotisserie Chicken
Why would you ever wait around to cook chicken breasts when you can have shredded rotisserie chicken ready to go in your freezer for all.the.things?
(I guess if you have to shred the chicken that night, you’ll need to add ten minutes to the prep time of this recipe.)
You’ll need at least 4 cups of this goodness, especially since the point is to bulk up the soup ingredients, especially protein, and minimize the broth.

Chicken Stock
I started using chicken stock as my default a few months ago, motivated mostly by our store brand chicken broth being constantly out of stock.
The flavor is noticeably better and worth the extra cost. It’s also nice to only use a single carton of stock.

Crushed Tortilla Chips
I doubled the crushed tortilla chips called for in the original recipe.
And of course, my kids eat practically an entire bowl of scoop chips with their bowls of soup.
Rotel
Some of us don’t love tomatoes, so one can of Rotel it is.
We use mild, but if you want to up the spice, you could use a spicer version.

Heavy Cream
I cut the heavy cream to half a cup to go with the reduced broth. And by the way, I never bother to bring it to room temperature.
Heavy cream is a staple in our house – thank you Costco for making it affordable!

Canned Corn
I don’t drain the can of corn – it goes in, juices and all.
Black Beans
These babies get drained and rinsed.
Why? Ummmm, I don’t know. Because apparently bean juices are gross, and all the other recipes say to do that?
Lime Juice
All the juice you can squeeze out of two limes. Yummmm.

Spices Galore
This recipe has a scrumptious combination of:
- Chili Powder
- Smoked Paprika
- Cumin
- Chipotle Powder
Naturally, kosher salt and freshly ground black pepper are added to taste.
Your Basic Toppings
Serve with pre-shredded Mexican cheese (or freshly shredded Colby Jack), sour cream, avocado and salsa.
Don’t forget tortilla chips on the side!

20-Minute Shredded Chicken Tortilla Soup
Equipment
- 1 Large Soup Pot
- 1 Ladle
Ingredients
- 2 tbsp Vegetable Oil
- 1 Chopped Sweet Onion
- 1 heaping tsp Chopped Garlic (optional)
- 1 32 oz. Carton Chicken Stock
- 1/4 cup Crushed Tortilla Chips
- 4-5 cups Shredded Rotisserie Chicken (See Notes)
- 1 10 oz. can Rotel
- 1 14 oz. can Sweet Corn
- 1 14 oz. can Black Beans, drained & rinsed
- 1 tbsp Chili Powder
- 2 tsp Cumin
- 1 tsp Smoked Paprika
- 1/4 tsp Chipotle Powder
- 1/2 cup Heavy Cream
- 2 Limes, Juiced
- Kosher Salt & Black Pepper, to taste
Toppings for Serving
- Shredded Cheese
- Avocado
- Sour Cream
- Pico De Gallo
Instructions
- Bring 2 tbsp vegetable oil to medium high heat and cook diced onions for 3 minutes or until translucent.
- Add ingredients chicken stock through smoked paprika (9 ingredients total). Bring to a boil, simmer for 10 minutes, covered or uncovered.
- Turn off the heat. Add heavy cream and lime juice. Stir and serve with toppings.
