Inside: If you love Costco, you’ll love this easy stir fry made with Kirkland chicken sausage, bell peppers and onions. It’s healthy, easy, fast and delicious!
In our neurodivergent household, family dinner is extremely rare (it’s one demand I let go of a long time ago). I never make one meal for all seven family members at once.
Instead, I plan 5-6 different meals throughout the week that will feed various combinations of family members. We have easy options on hand all the time to fill in the gaps.
Easy options like…
- Pre-made simmer sauces for Indian chicken dishes (made from Costco chicken tenders),
- Rice and black beans,
- Pasta with parmesan and/or sauce,
- Frozen hash browns,
- Just Bare chicken nuggets (from Costco, of course),
- PB & jelly or Nutella sandwiches.
This recipe is somewhere in the middle.
It’s most definitely not “girl dinner” since it requires more prep than our other easy options. But with how easy it is, I almost feel like a fraud calling it a “recipe”.
With just six ingredients, it’s one of the easiest dinners you’ll make this week.

Easy Costco Chicken Sausage Stir Fry Recipe

You could easily meal prep this on the weekend to make it even faster and easier. It takes me five minutes or less to chop the sausage and the veggies.
The ingredients are staples in our biweekly Costco runs, and we almost always have them on hand. So if you’re Costco fans like we are, you’ll love this super easy, healthy and flavorful meal.

I only use six ingredients for this recipe – with salt and pepper to taste. Sprinkle on some garlic powder or Italian seasoning if you need more flavor!

Kirkland Parmesan & Black Pepper Chicken Sausage
Our favorite chicken sausage from Costco! They have at least one other variety that we haven’t tried yet.
My favorite part is that chicken sausage lasts in the fridge much longer than fresh chicken or beef, making it easy to keep on hand for last minute meals.

Bell Peppers
We always buy a six pack of mixed color red bell peppers from Costco.
You can choose any colors you like for this recipe. I used red and yellow.
Onion
Something else you can get at Costco if you like. We don’t go through them enough to buy them in bulk.
If you really love onions, you can double them!

Butter & Olive Oil
Ever since The Pioneer Woman introduced me to the olive oil and butter combo, I use it in my cooking all the time.
For the sausage, I cook it in olive oil alone.
Spinach
You can always increase the amount if you like, but I only use half a 6 ounce bag.
You could get this at Costco too, most likely, but we get smaller bags from our local grocery story. We don’t like spinach that much.

Easy Costco Chicken Sausage Stir Fry
Equipment
- 1 Large Non-Stick Skillet
- 1 Non-Metal Spatula Turner
- 1 Rubber Scraper
Ingredients
- 1 Pack Parmesan & Black Pepper Kirkland Chicken Sausage (6 Links in a Pack)
- 2 Red, Yellow or Orange Bell Peppers
- 3 oz Fresh Baby Spinach
- 2 tbsp Olive Oil (Divided)
- 1 tbsp Salted Butter
- Salt & Pepper (To Taste)
- Optional: Italian Seasoning (To Taste)
- Optional: Garlic Powder or 2 Garlic Cloves
Instructions
- Chop chicken sausage into bite-sized rounds. Chop bell peppers and onions into bite-sized chunks.
- Heat large non-stick skillet to medium high heat. Drizzle with 1 tbsp olive oil.
- Once the pan is heated, add chicken sausage. Cook until slightly browned (about 5 minutes), stirring frequently using a non-metal utensil.
- Remove chicken sausage from pan to a large plate or bowl. Leave the pan on medium high heat for next step.
- Quickly add 1 tbsp butter and 1 tbsp olive oil back to the skillet. Allow to melt; then add peppers and onions to the skillet. Cook until crisp tender (about 5 minutes).
- Reduce heat to medium. Add spinach to the cooked vegetables and stire, allowing to wilt. Putting on a lid can speed up the process.
- Add chicken sausage back into the pan, using a rubber scraper to make sure all those yummy juices get added back into the dish.
- Turn off heat. Salt and pepper to taste, and serve! Top with freshly grated parmesan if desired.
