And since Costco membership has seen a huge uptick due to someone actually having the guts to stand by their DEI policies, I figured it was as good a time as any to share all the ways you can use one of their main loss leaders…

We’ve been shopping at Costco for years now, and every time we go, we get at least one, if not two, rotisserie chickens.

Are they annoying to shred when we get home? Yes. But is it worth having in the freezer when I need it? Also, yes.

What I love about Costco’s rotisserie chicken is I don’t have to think about the price!

These chickens are HUGE with so much meat. Five dollars is seriously a steal.

I don’t need to shop the sales or think about the price per pound. I just grab the chickens, bring them home, shred them, separate them into gallon-sized ziplocs and toss them in the freezer for later.

Our family’s favorite way to use rotisserie chicken? THIS creamy chicken tortilla soup.

If I was a “make homemade chicken broth” kind of girl, I would also make chicken stock with the bones. But I’ll leave that to people who enjoying cooking and “domesticating” way more than I do.
