Years ago in college, I was part of a church that held more than their share of potlucks and events with yummy food.

If there’s one thing the church did really well, it was good food and community. 

This chicken salad recipe is a nod to a favorite made by an old friend who brought it to almost every church event that involved food. 

I love any recipe with a mix of savory and sweet, and I love chicken salad! This re-creation was the closest I could get to the original, and I love the simplicity of it.

(Plus, I had some slivered almonds in my baking cabinet that needed to be used up.)

And you know that I will never ever complain about having another recipe that uses Costco’s cheap, delicious rotisserie chicken.

Simple & Sweet Rotisserie Chicken Salad

The best part about this recipe is the versatility. There are so many different ways to serve this!

  • Ditch the bread and wrap it in lettuce,
  • Add it to a summer salad (like THIS raspberry walnut salad),
  • Put it onto a charcuterie board,
  • Serve it on hamburger buns with toppings and chips,
  • Or serve it with flavorful crackers.

Truly – the sky’s the limit.

I, for one, am celebrating because my family won’t touch this (they’re not mayonnaise fans), so I will happily eat every last bite for a week, probably on crackers. Yay for not having to share!

Shredded Rotisserie Chicken

We always have some of this on hand in the freezer for soups, but it’s much better fresh for this particular recipe.

Chop it up for sandwich size bites. 

Mayonnaise

Skip the low fat – get the full fat good stuff! 

FYI: a jar with a lid is much easier for this recipe than the squeeze bottle in my fridge.

Honey

Where the sweetness comes from.

Red Grapes, Quartered

The most tedious part of the dish, unless of course you’re shredding the chicken today, these quartered red grapes add to the sweetness.

Slivered Almonds

No chopping these babies. Easy peasy to dump in and mix. 

Salt & Pepper

Add liberally or sparingly – your choice. Season to taste.

Sweet Rotisserie Chicken Salad

This super simple rotisserie chicken salad is on the sweeter side and perfect for using up Costco's shredded rotisserie chicken! Serve as sandwiches or with crackers.

Equipment

  • 1 Cutting Board
  • 1 Colander
  • 1 Chef's Knife
  • 1 Large Mixing Bowl
  • 1 Rubber Scraper
  • Measuring Cups

Ingredients
  

  • 2 Cups Rotisserie Chicken, Chopped
  • 1 Cup Red Grapes, Quartered
  • 1 Cup Mayonnaise
  • 1/4+ Cup Honey (Increase for Sweeter Salad)
  • 1/2 Cup Slivered Almonds (Substitute Candied Walnuts for More Crunch & Sweetness)
  • Salt & Pepper, to taste
  • Optional: Hamburger Buns, Crackers or Lettuce for Serving

Instructions
 

  • Chop rotisserie chicken into bite-sized pieces. Wash red grapes in colander and quarter (can halve if the grapes are on the small side).
  • Combine all ingredients in large mixing bowl. Stir to combine.
  • Season with salt and pepper to taste. Serve as desired.

Notes

  • Add 10-15 minute to the prep time if you are shredding the rotisserie chicken at time of preparation, instead of using already shredded chicken.
  • If serving on sandwiches, I highly recommend adding lettuce and dill pickles.
  • Seasoned triscuit crackers are great for parties or platters.
