If you’ve been here a while, you know that we love, love LOVE Costco. Especially after they took a stand against the current regime and retained their DEI policies.

Their “return anything for any reason at anytime” policy also rocks. We make all big appliance purchases at Costco now. But back to the recipe…

Because their rotisserie chicken is oh so cheap and delicious, I’m always looking for new recipes to use up all of that shredded chicken.

So when I discovered this recipe – a soup version of Marry Me Chicken – that uses shredded chicken? I knew it would become a favorite.

Easy Marry Me Chicken Soup Recipe

When I made Marry Me Chicken for my family, they weren’t quite as wowed by it as I was.

So I vowed to adjust this recipe to retain the essence of Marry Me Chicken that I loved, but make it more palatable for my picky fam.

The biggest adjustment I made was dicing the sun-dried tomatoes until they were barely recognizeable.

You can have big chunks in your soup if you like, but mine have to look pretty darn close to red pepper flakes to fly under the radar and go undetected.

Because apparently not everyone loves tomatoes as much as I do. How can you not love tomatoes?!!!

Red Onion

I love that this soup uses red onion! It has more of a bite to it than my go-to sweet onions.

Make sure to dice it fine.

Garlic

How could you not use garlic in soup?!

I keep a big ol’ jar of minced garlic in my fridge to save chopping time. Because I HATE mincing garlic.

Sun-Dried Tomatoes

These are what give Marry Me Chicken it’s signature taste. I prefer the bagged kind, but you can chop the slimy olive oil jarred kind – I won’t stop you.

Chop ’em big, or dice them into teeny tiny pieces like I have to to please the consumers of said soup.

P.S. If my family adored Orzo as much as I do, I’d make it three times a week.

Tomato Paste

I keep a can in my freezer over the fall and winter just for soups.

Chicken Stock

Because stock is better than broth.

Heavy Whipping Cream

Get it at Costco. Save a million dollars.

Ok, maybe not a million, but a couple dollars per purchase.

Cream Cheese

Normally, I ignore “bring to room temperature” notes, but in this case, you really are gonna want to bring it to room temperature.

Unless you like cream cheese chunks in your soup, of course.

Baby Spinach

Five ounces, six ounces. It doesn’t really matter. One bag from the produce section will do the trick.

And does anyone actually use the grown up spinach?

Shredded Rotisserie Chicken

The star of the show because it’s so freaking easy. Well, after you shred them, of course.

Buy a bunch of chickens at Costco, shred ’em up and keep it in the freezer for soups all fall and winter long.

Parmesan Cheese

We also have a wedge or two of parmesan cheese in the fridge. Because some of my kids are apparently parmesan snobs and the jar kind is lame?

(We also use it all the time in recipes.)

Spices

A yummy combination of Italian seasoning, basil and salt and pepper.

Personally, I use dried basil. But if you want, you can substitute the dried basil for fresh in a 1 tablespoon fresh to 1 teaspoon dried conversion ratio.

Easy Marry Me Chicken Soup

  • 1 Large Stockpot or Dutch Oven
  • 1 Cutting Board
  • 1 Chef's Knife
  • 1 Wooden Spoon or Spatula
  • Measuring Spoons & Cups
  • 1 Ladle

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 Red Onion, Diced
  • 2 tsp Minced Garlic
  • 1 cup Sun-dried Tomatoes, Finely Diced
  • 1 cup Orzo
  • 1 tbsp Tomato Paste
  • 6 cups Chicken Stock
  • 1 cup Heavy Whipping Cream
  • 8 ounces Cream Cheese, Cubed at Room Temperature
  • 3 tsp Dried Basil or 3 tbsp fresh, chopped
  • 1/2 tsp Black Pepper
  • Kosher Salt, To Taste
  • 1 tsp Dried Italian Seasoning
  • 1 bag Fresh Baby Spinach (5 or 6 oz.)
  • 2 cups Shredded Rotisserie Chicken
  • 1/2 cup Parmesan Cheese, Finely Shredded + More for Serving
  • Freshly Chopped Basil Optional

Instructions
 

  • Heat the olive oil in a large stockpot over medium heat. Once hot, add the diced red onion and sauté for 3-4 minutes until it softens and becomes translucent.
  • Stir in the minced garlic and cook for another 30 seconds, or until fragrant.
  • Add the diced sun-dried tomatoes and orzo and mix well, letting the orzo toast for a few minutes while the tomatoes release their flavor into the pot.
  • Gradually pour in the chicken stock, stirring to combine everything in the pot.
  • Reduce the heat to low and stir in the tomato paste, heavy whipping cream, cream cheese and spices. Allow the mixture to simmer gently until the cream cheese is melted.
  • Add the Parmesan and chicken stirring to distribute it evenly throughout the soup.
  • Add the baby spinach and stir occasionally until wilted.
  • Ladle the soup into bowls and serve immediately. Garnish with additional Parmesan or fresh basil, if desired.

Notes

Don’t Rush the Cream Cheese: Stir patiently to ensure it fully incorporates into the broth without clumping.
