Back in the day, I briefly tried out the whole “theme night” meal planning strategy. You know the one: Mexican Monday, Italian Tuesday, Soup Wednesday, etc., etc. I’m not really sure what other nights there were, but you get the idea.
But Mexican night? My entire repertoire was Old El Paso taco kits (flour tortilla kit for life). That’s it – that was all I had. Eventually I got super crazy, ditched the kits and…bought the tortillas separately.
Needless to say, it got pretty boring after a while, even for someone who can eat the same thing week after week. I also turned forty recently and felt like, I don’t know, maybe I should grow beyond Old El Paso. Maybe?
Eventually, I expanded my Mexican dinner recipes to, drum roll please: chicken tortilla soup. Crazy, I know!
While I no longer do theme nights, and my meals stay pretty much the same (supplemented heavily by Costco’s prepared food section), I do sometimes get the itch to try a new recipe. This itch strikes like, twice a year, and that’s why I have recipe round-ups handy with easy recipes in various categories all in one place.
But I didn’t have Mexican dinner recipes yet, so I asked my fellow bloggers for easy Mexican dinner recipes. Here’s the best of what they gave me – the best in my opinion, anyways.

27 Easy Mexican Dinner Recipes for Families

I always always ALWAYS ask for easy recipes. Because I don’t have time or energy for complicated. There will be no Julia Child’s beef bourguignon or anything close in this house or on this website – ever.
